We have a NuWave PIC GOLD here at the RV and we have their new professional units at home (two of them). We never even use our stove top any longer and we are in the process of changing all of our cookware to be induction capable (Ross and TJ MAX are great places to hunt for them). We recently purchased one of those air fryer things and my wife LOVES the chicken wings but we don't have the counter space in the RV for one of those here (we have an ice cube maker that takes up the counter along with the coffee pot).
Here in the RV, we use the NuWave and NEVER light the burners on the stove and we have only used the oven twice (here a month now). The BBQ grill has done yeoman duty and we have not eaten out (no choice, nobody is open).

I second that opinion on the NU Wave. We have two portable ones and use them occasionally at home. They really shine when running on a generator as you can adjust the amount of power they draw (600, 900 or 1500 watts). They are also great when cooking or reheating meals indoors with the Air conditioner running. They don't heat up the interior of our TT nearly as much as the gas range.
While I wouldn't replace our gas range with Induction cook tops, I have to say that they do add a great deal of flexibility depending on the circumstances....
As for other goodies, I would suggest a Blackstone griddle.. We decided to leave our grill home as the Blackstone does everything from Bacon and eggs, French toast, Steaks and chicken, to stir fry veggies and French fries. Using an aluminum foil baking pan as a cover you can reheat just about anything and then use the pan as a serving dish.. We used the smallest Blackstone griddle to prepare breakfast lunch and dinner over a weekend for 8 people..
