Your sink p-traps got emptied due to bouncey roads.

You are right, could be worse, and often is!

Another couple of possibilities are that you may not have been quite level when you dumped the tanks, and/or the bottom of the tank is not properly supported and it bulged down and did not empty completely, then running down the road it worked it's way into the drain line. Did you have the gray valves closed? If they were and you are still getting water you may have a leaking valve to deal with too.

You may think the tanks are totally empty but sometimes, you rv is slightly out of level or it is out of level when you reset up... I have one of these valves on my rv just for this issue. You have not lived until you get a rush of "stuff" from the black tank when you remove that sewer cap (and it will happen sooner or later).

I would also recommend a clear elbow also just to be able to see if there are any surprises waiting for you. They sell these at walmart relatively inexpensively.

It's also good for knowing that your tank flushing is working.

Why weren't your dump valves closed?

This! They were either left open to some degree or is defective. P-traps, not being empty or level etc should have nothing to do with fluids inside the cap.
