Won't extending the sides after leveling change things, due to weight hanging out.

Previous TT's did not.

Maybe have a 1x6 and 2x6 cut to fit under your tires. Install a east west level on your hitch and ask them to use the boards to get it as close as the can before dropping the trailer.
