I'd love to get my hands on a parts catalog/manual. As well as wiring and plumbing diagrams. Does such a thing exist?

NOPE! You just have to wing it and make your own drawings from investigation.

Welcome to the Forums! Unfortunately you are own your own when it comes to parts and diagrams. Based on what I have observed over the years I am not sure the factory had any either.

Best bet is to make a list of all your appliances and equipment, make note of the manufacturer, model and serial numbers then search online for manuals. If you get stuck on any of them just ask for help.

If I ever open something up, remove a panel, do any work or do anything like that, I take a ton of pictures. I created an album called Trailer Reference that they all go into. That's going to be your best resource unfortunately.
