Since you are starting over, make templates of your benches and backs, then give the template dimensions to an upholstery shop. (NOTE: estimate bigger rather than smaller.) For the bench seats, tell the shop you want a foam density of Matl: 2535, which will likely be a Starting slab size: 4t x 60 x 82 for a U-shaped dinette. This foam is about the best you can buy. It is dense enough that your bums don't bounce off the bench base, and the edges will remain firm. After the cushion foam is cut from the slab, bring them home and see how they fit. For the bench backs, you can use the same foam material, or, something not quite as dense and perhaps less expensive. If there are adjustments to be made you can trim the excess. Then take them back to the upholstery shop and have the covers made. So there you go.
