More a/c problems
I had my a/c set to 73 all day yesterday. Fan set to lo. Sometime during the night it just kicked off. Woke up this morning and it was 78 degrees inside the camper. A/C was completely off. No fan or compressor running. Thermostat was in the cool mode, fan set to lo, but it wasn't running. I turned the stat to off and then back to cool and it fired up and ran fine. Did the same thing later in the morning. No error codes or anything. Any ideas?

The lo fan setting will allow the fan to run without the A/C operating. Change the fan setting to automatic and see how the A/C operates.

Fan set to lo, thermostat set at 73 in cool mode, it was 78. Compressor and fan should have been running.

Got gremlins... or you are losing the smoke out of the electronic controls. I have a window unit that does the same thing on occasion. Apparently the thermostat doesn't always read the correct temperature. Running it down and back up seems to clear the issue. To cheap/lazy at this point to dig into the why behind it. FWIW mine is set for 78° and will run up to around 84° sometimes before it kicks back in. At lower temp settings it seems to work just fine. With my bride there ain't but one setting... "meat locker"

Put the fan on auto and then cool otherwise it only runs the fan, also works the same way on heat, it must be on auto.

Huh??
No offense, but if we're talking about the CCC2 thermostat... then it sounds as if yours is wired funny.
As long as I set my units on COOL, I can put the fan in AUTO, HI, MED, or LOW... and as long as the inside temp is higher than the temp set on the thermostat, my AC compressor runs.
If the fan is on AUTO, and the inside temp cools down to what the thermostat is set to, then the entire system cuts off. Under the same conditions, if the fan is set on either HI, MED, or LOW... then the fan will continue to run, even though the compressor cuts off. Once the inside temperature rises again, the compressor cycles on & off as necessary.
At least... that's the way it's SUPPOSED to work.

I went to your link and apparently I have a different style of thermostat, mine is a 3"x3" square.

I've had the same thing happen. Also not sure what is up, but haven't dug in to find the answer or taken it back for service. With the high humidity here if Florida, I have found running the fan continuously can ice up the unit. I guess it needs some down time to "thaw".
If this keeps up too much, I'll be checking on a different T-stat.
Maybe someone will have a good answer and we can get this issue put to bed.

I also just had this problem and so did a friend of mine on the same trip. We both have the 3"X3" black dometic t-state and 15K BTU unit. The stat was set at 70/auto/cool and cooled just fine. After it was satisfied, it turned off didn't come on again as the temp got warm. I had to cycle the t-stat to off and back to cool to get it to come on again.
I checked the coil and had no icing or anything irregular.
It appears that something is going on with the controller or t-stat.
Any help would be appreciated.

My main a/c lost its charge back in april. RV was only 8 months old. I charged it myself because I didn't want it sittin at a dealer lot for half the camping season.
