We just bought a 2017 Aspen Trail 2340bhs and have the same setup/issue. I have been tracking down some of that same panel material. I think I've found a place to get that matching thin board. The first step will be to enclose the shorter shelf/gap to the left of the radio and use that for the inverter on/off switch, wire some USB ports for recharging kids electronics and similar sorts of things.
If you find easy/inexpensive ways of adding nice looking doors to the other shelves, please share!
