Mine is a Norcold and only has an on off switch. Behind the vented fridge cover on the outside of the trailer, is an outlet which the fridge is plugged in to. When on 120 volt power the fridge will not revert to propane.
My plan is to install an extension, with an conveniently mounted wall mounted switch to shut off the 120 volt power to the fridge when I want it to run on propane.
This is for when I am boondocking with power from my generator.
Until I do, Its easy enough to just remove the outdoor cover and just unplug the fridge.
Safe travels and all the best.
