You have a NPT male fitting there, why not just get a female valve and screw it on? No sense in cutting PEX tubing. By saving the male pipe threads you can always screw the cap back on in the event...

1/2 inch NPT is just what it is. Any valve with 1/2 inch NPT will fit. Fortunately the RV industry doesn't get into having their own thread pitch and pipe sizes.
