You can leave the stock converter installed and intact just turn off breaker that way you have a backup in case the victron charger ever fails or if you ever sell the Rv it's easy to go back

Do your ac's run ok on shore power ? If so I would say it's a problem with the 6300w generator I have a 2017 3605 with the factory installed on an 5500 and it has no problems running both ac units...
