We are new campers running the air and we have lots of water running down is that normal? Almost like it is raining.

Well, it's not unusual... especially if you're staying in hot & humid conditions.

I constantly have water running off my roof when the ac is going. Let's me know I got it leveled right!

Yup... normal. You can tweak where it runs off by the way you level it. Also I have seen people build small channels on the roof with caulking to get it to move some where specific.

I always level my camper until a marble won't roll off the counter, my last two campers dripped off the front corner right over the storage compartment
Even leveled slightly back they still do it, enraging.

I lost my marbles years ago...

I discovered long ago with RV's that leveling them IS NOT an OCD requirement. Just get them close enough to be comfortable. The most sensitive thing is usually the fridge, and it can handle several degree's off level.

From the Norcold Service Manual

Off-level operating limits:
Side-to-side - 3 degrees maximum at refrigerator.
Front-to-back - 6 degrees maximum at refrigerator.

That is off level enough that most people would be uncomfortable with it. If your fridge is a typical mount with the rear facing a side wall that would allow you to have the trailer nearly 8" out of level side to side. That WILL run water!
