Issue with hot water in shower and bath sink

Hey all! New to the forum here.
I have owned my 2014 Dutchmen Denali 246rk for over 2 years now.
The last couple times we have taken it out we have been having an issue with only getting luke warm water in the shower and bath sink. Even with the hot completely on and cold turned off.
There is no issue in the kitchen sink for hot water. It comes out super hot!
I read something about the water heater regulator for hot and cold which makes a smaller hot water tank last longer by heating up the water hotter than normal and mixing in colder water to prolong and act like a bigger tank.
If there was an issue with this, wouldn't it affect the entire trailer water system, not just the plumbing on the far end of the trailer?
We are camping now and would love some help so I can get it troubleshot from here!

If you have an outside shower, ensure the water is turned off at the hot/cold knobs, not just the on/off button on the shower head. This may not be your issue, since you have scalding water in your kitchen, but it's worth a look.

Also check your winter bypass valve. Having it open is a common source of lukewarm water, although usually all water taps have the same issue rather than just one. The bypass should be closed during normal use.
