I guess my question is on ease of use and maybe wattage usage. We know we will need a coffee maker and toaster, is it better to get the lowest wattage possible, especially because we will have an eye to boondocking in the future?
Is a small, countertop convection oven useful or too much of an energy hog? Any tips on shopping for essentials?

Don,
We have never used a coffee maker when camping. We used to use a Melita Drip cone and just boiled the water and pour. We did that for close to thirty years, but after having coffee made in a French Press at a friends house, we got a French Press. Now if the coffee machine at home would just die.
Same story for toast, we have had one of them old camp stove toasters, since day one. It works fine on the propane burners, you just have to keep an eye on it while it's toasting.
We would gladly give up the microwave for a built-in convection oven. We have a gas range with a convection oven at home. The only time we don't use the convection is when we are broiling. If only there was a propane stove with a 12V fan running for the convection.
If you decide to go to a Melita cone or French Press, you want to visit a Home Hardware and get yourself a one of the burner covers. It's a perforated aluminum disk sandwich, with a handle on it and charcoal between the two disks. It lets you set your glass coffee pot on the stove without worring about it getting too hot sitting directly over the burner.
We always look for products that can serve two functions. French Press becomes a tea pot, saves alot of storage space and weight.
