I'd prefer to get a new one (with more pressure) then I can play around with the old one at my leisure.
Any recommendations?

Any quality 12 volt demand pump will work. Water pumps are like cars, Chevy or Ford. Shurflo, Flojet and whatever else is out there.
Just don't go to the local RV dealer to get it, search prices on the Internet first.
However, before spending the money on a new pump I think you need to discover why the pump doesn't pump and build pressure immediately. My guess is you have a loose connection on the intake side of the pump.
