I think everybody's pretty much covered all your camping options for the FL Keys. IMO Bahia Honda State Park offers the biggest bang for the buck, but it's extremely difficult to get a reservation. If you're a Passport America (passportamerica.com) member there are a limited number of RV parks in the FL Keys that accept PA memberships (50% discount) for limited stays during the off-season.
BTW, we pull our toy hauler (with a jetski and kayaks onboard) from AZ to Key West and back for a 1-2 month stay at least once a year. Southern AZ is a blast, but we miss the ocean every now and then. We do visit the west coast occasionally---we're just more drawn to the FL Keys and the much, much warmer water. Water temps in the Florida Keys get up to 88 degrees or so during the summer and early fall (vs. the 60's on the west coast).
You're gonna love the FL Keys! Closest you'll get to a Caribbean adventure in the US. Have a safe, fun trip
